Chicken and Chorizo Traybake
This chicken and chorizo traybake is a useful midweek dinner because the oven does most of the work. Chorizo releases flavorful fat as it cooks, which seasons the potatoes and vegetables below the chicken.
Use bone-in, skin-on chicken thighs for the best flavor and texture. If you prefer boneless thighs, reduce the cooking time slightly and check the internal temperature early.

Cooking tips and substitutions
- If the potatoes are not tender when the chicken is done, remove the chicken and continue roasting the vegetables for 5–10 minutes.
- Use sweet potatoes for a slightly sweeter traybake.
- Add cherry tomatoes during the final 15 minutes.
- For a milder dish, use less chorizo and add a little extra olive oil.
