Creamy Garlic Mushroom Chicken
Creamy garlic mushroom chicken brings together golden chicken, earthy mushrooms, and a sauce made in the same skillet. A little Dijon mustard adds a savory edge, while parsley gives the finished dish a fresh lift.
Serve it over rice or mashed potatoes to catch the sauce, or pair it with green beans and crusty bread for a relaxed dinner.
Recipe overview
- Servings: 4
- Estimated preparation: 15 minutes
- Estimated cooking: 25 minutes
- Estimated total: 40 minutes
- Equipment: Large skillet, tongs, food thermometer
Ingredients
- 2 large boneless, skinless chicken breasts, approximately 650–750 g total
- ¾ teaspoon fine salt, divided, plus more to taste
- ½ teaspoon black pepper
- 2 tablespoons olive oil, divided
- 250 g mushrooms, sliced
- 1 small onion, finely diced
- 4 garlic cloves, minced
- ½ teaspoon dried thyme
- 180 ml low-sodium chicken stock
- 180 ml heavy cream
- 1 teaspoon Dijon mustard
- 2 tablespoons chopped parsley
Instructions
- Slice each chicken breast horizontally into two cutlets. Flatten any thick areas so the pieces cook evenly. Season with ½ teaspoon salt and the pepper.
- Heat 1 tablespoon olive oil in a large skillet over medium-high heat. Cook the chicken for approximately 3–5 minutes per side, working in batches if necessary, until golden and cooked through.
- Check that the thickest part reaches 74°C/165°F, then transfer to a clean plate.
- Add the remaining oil and mushrooms to the skillet. Cook for 6–8 minutes, stirring occasionally, until the released liquid evaporates and the mushrooms begin to brown.
- Add the onion and cook for 3 minutes. Stir in the garlic, thyme, and remaining ¼ teaspoon salt; cook for 30 seconds.
- Pour in the stock, scraping up the browned bits. Simmer for 2 minutes, then add the cream and mustard.
- Simmer gently for 3–5 minutes until slightly thickened. Return the chicken and its juices to the skillet and warm through.
- Taste, adjust the seasoning, and finish with parsley.
Cooking tips and substitutions
- Give mushrooms room to brown rather than stirring constantly.
- Keep the sauce at a gentle simmer after adding cream.
- Boneless chicken thighs can replace the cutlets, but cooking time will differ.
- Add a handful of spinach near the end for a vegetable variation.
