Rosemary Lamb Chops with Garlic
Rosemary lamb chops need only a short ingredient list to make an inviting dinner. Fresh rosemary and garlic bring plenty of aroma, while lemon zest adds brightness without overwhelming the lamb.
Choose chops of a similar thickness so they finish at roughly the same time. A heavy skillet helps develop a golden surface.

- Estimated preparation: 10 minutes
- Estimated cooking and resting: 15 minutes
- Estimated total: 25 minutes
- Equipment: Heavy skillet, tongs, food thermometer
Ingredients
- 8 lamb loin chops, approximately 2–3 cm thick
- 2 tablespoons olive oil, divided
- 2 teaspoons finely chopped fresh rosemary
- 3 garlic cloves, minced
- Finely grated zest of 1 lemon
- ¾ teaspoon fine salt
- ½ teaspoon black pepper
- 15 g butter
- Lemon wedges, to serve
Instructions
- Pat the lamb chops dry. Mix 1 tablespoon oil with the rosemary, garlic, lemon zest, salt, and pepper.
- Rub the mixture over the chops.
- Heat the remaining oil in a heavy skillet over medium-high heat.
- Add the chops in a single layer, working in batches if needed. Sear for approximately 3–4 minutes on the first side.
- Turn and cook for another 3–4 minutes, adjusting the heat if the garlic begins to darken.
- Add the butter during the final minute and spoon it over the chops.
- Check the thickest part without touching bone. Cook to at least 63°C/145°F and rest for at least 3 minutes before serving. Thicker chops may need additional time over reduced heat.
- Serve with lemon wedges and the pan juices.
Cooking tips and substitutions
- Use ¾ teaspoon dried rosemary if fresh is unavailable.
- Remove thick, woody rosemary stems before chopping.
- Do not crowd the skillet; cook two batches if necessary.
- Rib chops can be used, but their cooking time may differ.
